Pickled Red Cabbage

Pickling red cabbage or even pickling for that matter is surprisingly easy and quick. All you need is vinegar, sugar, and salt to have a base. They add a nice pop of color to any dish and can bring in some great “briney” flavors.

Before you begin, a couple things to note:

  • Make sure your ratios are right, it does not have to be perfect but it should be somewhat close.

  • You can add whatever spices you like depending on which flavors you prefer

  • This is a quick pickle which will only take about 30 minutes but some take much longer, weeks or months.

Pickled Red Cabbage

Ingredients:

  • 2 cups of apple cider vinegar (you can use any vinegar)

  • 1 cup of water

  • 1 1/2 tablespoons salt

  • 2 tablespoons sugar

  • Any spices you want to add (ginger, garlic, cloves, bay leaf, dill, caraway seeds, etc.)

Instructions

  1. Slice cabbage into strips

  2. Add water, sugar, vinegar, and salt into a pot and bring it to a simmer

  3. While waiting for it to simmer, add desired spices to the bottom of your jar and then pack in your sliced cabbage

  4. Once simmering, take off heat and add the vinegar mixture to your jar over your cabbage and loosely seal

  5. After 10 minutes your pickled cabbage is ready to use. For storage, seal well and let cool to room temp. Enjoy!

Red cabbage is a great accompaniment to add color and zest to many dishes. Try it with tacos, fish dishes, especially salmon, in rice bowls, on a burger or hotdog or anything with potatoes!
